Prega started at Nonna Lucia's table, where nobody ate until everyone had a seat. Sixteen years on, we still cook the way she did — slowly, generously, and always with enough for one more plate.

Our oven runs on oak and nothing else. Ninety seconds, and the pizza's on its way to you.
